A fresh and vibrant vegan couscous salad packed with herbs, chickpeas, and a zesty lemon dressing.
Ingredients

pearl couscous

vegan butter

cherry tomatoes

broth
(vegan chicken broth)

red onion
(diced)

chickpeas
(drained & rinsed)

grated vegan parmesan
(Follow Your Heart)

garlic
(finely minced)

fresh herbs
(parsley, basil & mint)

olive oil

lemon
lemon juice

tablespoon
dijon mustard
to taste
salt & pepper
Instructions
Melt vegan butter and toast couscous for 2-3 minutes.
Add tomatoes and broth, bring to a boil, then simmer for 12-15 minutes until liquid is absorbed.
Cool the couscous mixture for 30 minutes.
Mix in remaining ingredients, toss, and adjust seasoning as needed.
Serve immediately or chill in the fridge.
Notes
Use fresh herbs for the best flavor and adjust seasoning to taste.
