A fresh and vibrant vegan couscous salad packed with herbs, chickpeas, and a zesty lemon dressing.

Ingredients

Main

  • 8 oz pearl couscous (see notes)
  • 2 tablespoons vegan butter
  • 1 cup cherry tomatoes
  • 2 1/2 cups broth (vegan chicken broth)
  • 1 small red onion (diced)
  • 1 15-ounce can chickpeas (drained & rinsed)
  • 1/4 cup grated vegan parmesan (Follow Your Heart)
  • 1-2 cloves garlic (finely minced)
  • 1/3 cup fresh herbs (parsley, basil & mint)
  • 1/4 cup olive oil
  • 1 lemon lemon juice
  • 1 tablespoon dijon mustard
  • to taste salt & pepper

Instructions 

  • Melt vegan butter and toast couscous for 2-3 minutes.
  • Add tomatoes and broth, bring to a boil, then simmer for 12-15 minutes until liquid is absorbed.
  • Cool the couscous mixture for 30 minutes.
  • Mix in remaining ingredients, toss, and adjust seasoning as needed.
  • Serve immediately or chill in the fridge.

Notes

Use fresh herbs for the best flavor and adjust seasoning to taste.
