A fresh and vibrant salad combining fluffy couscous with herbs, vegetables, and a zesty lemon dressing.

Ingredients

Grains

  • 1 cup couscous
  • 1 ¼ cups vegetable broth

Vegetables & Herbs

  • 1 cup cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • ½ cup red onion (finely chopped)
  • ½ cup parsley (chopped)
  • ½ cup mint (chopped)

Dressing

  • 3 tablespoons olive oil
  • 1 each lemon (juiced and zested)
  • to taste Salt and pepper

Instructions 

  • Bring vegetable broth to a boil, add couscous, cover, and let sit for 5 minutes. Fluff with a fork.
  • Combine cooked couscous, cucumber, cherry tomatoes, red onion, parsley, and mint in a large bowl.
  • Whisk lemon juice, zest, olive oil, salt, and pepper. Pour over the salad and toss.
  • Refrigerate for at least 10 minutes before serving.

Notes

For extra flavor, add a sprinkle of feta cheese or toasted nuts.
