A fresh and vibrant salad combining fluffy couscous with herbs, vegetables, and a zesty lemon dressing.
Ingredients

couscous

vegetable broth
Vegetables & Herbs

cucumber (diced)

cherry tomatoes (halved)

red onion (finely chopped)

parsley (chopped)

mint (chopped)
Dressing

olive oil

lemon (juiced and zested)
to taste
Salt and pepper
Instructions
Bring vegetable broth to a boil, add couscous, cover, and let sit for 5 minutes. Fluff with a fork.
Combine cooked couscous, cucumber, cherry tomatoes, red onion, parsley, and mint in a large bowl.
Whisk lemon juice, zest, olive oil, salt, and pepper. Pour over the salad and toss.
Refrigerate for at least 10 minutes before serving.
Notes
For extra flavor, add a sprinkle of feta cheese or toasted nuts.
