Instructions
Preheat oven to 400°F (200°C). Mix olive oil, garlic, herbs, paprika, salt, and pepper to make the herb oil.
Spread the herb oil over the cod fillets and place in a baking dish. Top with lemon slices and cherry tomatoes around.
Bake for 12-15 minutes until fish flakes easily. Drizzle lemon juice and sprinkle parsley before serving.
Notes
Serve with extra lemon wedges for added zest.
