Enjoy a light, flavorful baked cod dish infused with fresh herbs, lemon, and cherry tomatoes for a healthy and delicious meal.

Ingredients

Protein

  • 24 oz cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon paprika
  • to taste Salt and black pepper
  • 1 lemon lemon, thinly sliced (plus more for serving)
  • 0.25 cup fresh parsley, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh lemon juice

Instructions 

  • Preheat oven to 400°F (200°C). Mix olive oil, garlic, herbs, paprika, salt, and pepper to make the herb oil.
  • Spread the herb oil over the cod fillets and place in a baking dish. Top with lemon slices and cherry tomatoes around.
  • Bake for 12-15 minutes until fish flakes easily. Drizzle lemon juice and sprinkle parsley before serving.

Notes

Serve with extra lemon wedges for added zest.
