A quick and flavorful vegan pasta dish infused with lemon and garlic, perfect for a light meal.

Ingredients

Pasta

  • 6 ounces pasta
  • 1 tablespoon vegan butter
  • 1 tablespoon olive oil (extra virgin)
  • 3 garlic cloves garlic
  • 1 lemon (juice and zest) lemon
  • ½ teaspoon chili flakes
  • ½ cup vegan cream (or coconut milk)
  • ½ cup pasta water
  • 2 tablespoons vegan Parmesan cheese
  • ½ cup peas

Instructions 

  • Cook pasta according to package instructions; drain, reserving ¼ cup pasta water.
  • Heat vegan butter and olive oil in a pan over low-medium heat.
  • Add garlic, lemon juice, zest, and chili flakes; sauté 30 seconds. Add pasta water and cream, heat through.
  • Mix pasta into sauce, add peas, and garnish with vegan Parmesan.

Notes

Use fresh lemon for the best flavor and adjust chili flakes to taste.
