Ingredients

Chicken

  • 1.5 lb chicken breast (2 large, patted dry)
  • 1 Tbsp olive oil (to sautee)
  • 1 Tbsp parsley (to garnish (optional))
  • 0.5 lemon lemon (sliced for garnish (optional))
  • 2 large eggs
  • 1 garlic clove garlic (minced)
  • 0.5 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 1 cup Parmesan cheese (grated)
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 garlic cloves garlic (minced)
  • 0.25 cup lemon juice
  • 0.25 cup chicken broth
  • 0.25 tsp ground black pepper

Instructions 

  • Cut chicken in half lengthwise and pound to even thickness.
  • Whisk eggs; combine Parmesan. Dip chicken in eggs, then coat with Parmesan mixture.
  • Cook chicken in hot oil 4-5 minutes per side until golden and cooked through.
  • Melt butter with garlic, add broth, lemon juice, and pepper; cook 2 minutes. Pour sauce over chicken and garnish with lemon slices and parsley if desired.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
