A flavorful low-carb take on classic teriyaki chicken, perfect for quick weeknight dinners or meal prep.

Ingredients

Oil and Aromatics

  • 1.5 tablespoons sesame oil (divided)
  • 1 1/2 teaspoons fresh ginger (minced)
  • 1 teaspoon garlic (minced)

Sauce

  • 1/2 cup tamari (or low sodium soy sauce)
  • 1/4 cup brown sugar substitute
  • 3 tablespoons sherry
  • 1/4 cup water
  • 1/2 teaspoon xanthan gum

Main ingredients

  • 1.5 lbs chicken thighs (diced)
  • 1/2 red onion red onion (sliced)

Garnish

  • optional sesame seeds

Instructions 

  • Heat 1 tablespoon of sesame oil in a saucepan over medium-high heat. Add ginger and garlic; sauté 2 minutes.
  • Add tamari, brown sugar substitute, and sherry; simmer for 10 minutes. Meanwhile, heat remaining sesame oil in a large pan, stir-fry onions for 2 minutes, then add chicken and cook until done.
  • Make a slurry with xanthan gum and water; add to sauce, whisk until thick. Pour sauce over chicken and coat evenly. Serve with lettuce wraps or cauliflower rice, garnished with sesame seeds.

Notes

Adjust cooking time as needed to ensure chicken is fully cooked.
