Delicious keto-friendly mini corn dog bites with cheesy hotdog centers, perfect for a low-carb snack or appetizer.

Ingredients

Dough

  • 1/2 cup coconut flour
  • 2 tbsp Swerve Granular
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 4 large eggs
  • 1/4 cup butter, melted
  • 1/2 cup water
  • 1/4 to 1/2 tsp cornbread flavoring ((optional, can also use vanilla))
  • 4 ounces shredded cheddar cheese, divided
  • 4 hot dogs each cut into 6 pieces

Instructions 

  • Preheat oven to 325°F and grease mini muffin pan.
  • Mix coconut flour, sweetener, baking powder, and salt. Add eggs, melted butter, water, and flavoring; stir in 3/4 of cheese.
  • Divide batter into muffin cups, press a hotdog piece into each, and sprinkle remaining cheese on top.
  • Bake for 15-20 minutes until cheese melts and muffins are firm. Cool for 15 minutes before serving.

Notes

Ensure hot dogs are cut evenly for uniform bites.
