Ingredients

Salad Ingredients

  • 6 cups chopped kale
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup feta cheese, crumbled

Dressing Ingredients

  • 2 tbsp lemon juice
  • 1 lemon lemon zest (from one lemon)
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground pepper

Instructions 

  • Remove the woody stalk from the kale leaves and chop the kale.
  • Rinse the kale and dry it using a salad spinner or paper towel.
  • Massage the kale with olive oil for 30 seconds to soften it.
  • Add cranberries, walnuts, lemon zest, and feta to the kale.
  • Mix dressing ingredients in a jar and shake until emulsified.
  • Pour dressing over the salad and toss to combine.

Notes

For extra flavor, let the salad sit for a few minutes before serving.
