A vibrant vegan salad combining hearty kale, crunchy roasted chickpeas, and a tangy Caesar dressing for a satisfying meal.

Ingredients

Vegetables

  • 1 bunch kale, chopped
  • 1 can chickpeas, rinsed and drained

Dressing & Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste Salt and pepper
  • 1/4 cup nutritional yeast
  • 1 each lemon, juiced
  • 1/2 cup vegan Caesar dressing

Toppings

  • Croutons for topping (optional) croutons (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Toss chickpeas with 1 tbsp olive oil, garlic powder, salt, and pepper. Roast for 25–30 minutes until crispy.
  • Massage chopped kale with lemon juice for 2–3 minutes until softened. Sprinkle nutritional yeast and add Caesar dressing. Toss to coat.
  • Top the kale with roasted chickpeas and croutons if desired. Serve immediately.

Notes

For extra crunch, add more croutons or a squeeze of lemon before serving.
