Ingredients

Pasta

  • 1 pound ditalini pasta (or shell pasta for variation)

Dressing

  • 2 tablespoons olive oil
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 teaspoons sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried dill
  • ½ teaspoon paprika
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ medium red onion, finely chopped
  • 1 bell pepper diced (red or yellow)
  • ¾ cup frozen peas, thawed
  • ½ cup celery, chopped
  • ¼ cup fresh parsley, chopped
  • 2 hard-boiled eggs chopped (optional)
  • ½ cup sharp cheddar cheese, cubed (optional)

Instructions 

  • Cook pasta in salted boiling water until al dente, then rinse with cold water and toss with olive oil.
  • Whisk together mayonnaise, sour cream, vinegar, mustard, sugar, and spices to create the dressing.
  • Prepare vegetables by dicing and chopping them into bite-sized pieces.
  • Combine pasta, vegetables, parsley, and optional ingredients, then fold in the dressing.
  • Chill the salad for at least 2 hours to allow flavors to meld before serving.
