A hearty and flavorful turkey chili cooked effortlessly in the Instant Pot, perfect for a quick weeknight dinner.

Ingredients

Meat

  • 1 pound ground turkey
  • 1 cup broth or stock (low sodium)
  • 1 large onion (diced)
  • 3 large garlic cloves (minced)
  • 1 large red bell pepper (diced)
  • 1.5 cups corn (canned or frozen)
  • 14 ounces low sodium red kidney beans (rinsed & drained)
  • 14 ounces low sodium cannellini beans (rinsed & drained)
  • 14 ounces low sodium pinto beans (rinsed & drained)
  • 2 tablespoons chili powder (for mild, 3 tablespoons for spicy)
  • 1 teaspoon cumin
  • 1 teaspoon oregano (dried)
  • 0.5 teaspoon paprika
  • 0.75 teaspoon salt
  • 28 ounces diced tomatoes (low sodium)
  • 6 ounces tomato paste (low sodium)

Oil (for frying)

  • 2 tablespoons oil

Toppings

  • Green onion, cilantro, cheese, plain yogurt (for serving)

Instructions 

  • Select Sauté mode on the Instant Pot, heat oil, add ground turkey, and cook for 4 minutes, breaking into small pieces.
  • If browned bits stick, add 1/2 cup broth to deglaze; then add remaining broth.
  • Add onion, garlic, bell pepper, corn, beans, spices, diced tomatoes, and tomato paste. Do not stir.
  • Close lid, set to Pressure Cook on High for 15 minutes, then quick release pressure.
  • Open lid, stir chili, and serve hot with your favorite toppings.

Notes

Feel free to adjust spice levels and toppings to taste.
