A fresh and tangy chicken salad featuring lemon and herbs, perfect for a light lunch or dinner.

Ingredients

Protein

  • 2 large Boneless chicken breasts

Dressing

  • 3 tablespoons Olive oil
  • 3 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Minced garlic

Vegetables

  • ½ cup Chopped celery
  • ¼ cup Finely chopped red onion
  • ¼ cup Chopped fresh parsley
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  • Cook the chicken breasts until fully cooked, then let cool and chop.
  • In a bowl, whisk together lemon juice, lemon zest, Dijon mustard, garlic, olive oil, salt, and pepper to make the dressing.
  • Combine chopped chicken, celery, red onion, and parsley in a large bowl.
  • Pour the dressing over the chicken mixture and toss to combine.
  • Serve immediately or chill before serving.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
