A flavorful and easy Korean beef bowl perfect for meal prep, combining savory beef, rice, and fresh vegetables.

Ingredients

Grains

  • 1 1/2 cups brown rice

Broth

  • 3 1/4 cups low sodium chicken broth

Seasonings

  • 1/2 tsp sea salt
  • 1 1/2 tsp fresh ginger, (minced)
  • 2 tsp low sodium soy sauce
  • 1/3 cup rice vinegar
  • 1 tbsp raw honey
  • 1 tbsp olive oil

Meat

  • 2 lbs lean ground beef

Vegetables

  • 5 carrots carrots, (cut into matchsticks)
  • 1 cucumber cucumber, (sliced)
  • 4 green onions (thinly sliced)

Oils & Seeds

  • 1/2 tsp sesame seeds
  • 1 tbsp sesame oil

Other

  • 1 tbsp orange juice
  • 1 tsp orange zest
  • 1/2 tsp crushed red pepper flakes

Instructions 

  • Cook the brown rice in chicken broth until tender, about 20 minutes.
  • In a skillet, cook ground beef with ginger, garlic, soy sauce, and red pepper flakes until browned.
  • Mix rice vinegar, honey, orange juice, and zest; toss with cooked beef and vegetables.
  • Assemble bowls with rice, beef mixture, cucumber, boiled eggs, and green onions. Drizzle with sesame oil and sprinkle sesame seeds.

Notes

For extra flavor, marinate the beef in soy and ginger beforehand.
