A flavorful and easy plant-based dish featuring spicy honey-glazed chickpeas served over rice with fresh vegetables and toppings.

Ingredients

Oil & Aromatics

  • 1 Tbsp avocado oil
  • 2 tsp minced garlic

Canned & Sauces

  • 1 15 oz. can chickpeas (drained)
  • 1/4 cup honey
  • 2 Tbsp sriracha
  • 1 tsp salt
  • 1 tsp pepper
  • 1/8 tsp cayenne (optional)
  • 1/4 tsp crushed red pepper (optional)

Grains & Vegetables

  • 2 cups cooked brown rice
  • 4-5 stalks celery (chopped)
  • 4 medium carrots (chopped or shredded)

Toppings & Optional

  • 4 Tbsp healthy ranch dressing (optional, for topping)
  • cilantro cilantro (for topping)

Instructions 

  • Heat oil and garlic in a skillet over medium heat.
  • Add chickpeas and cook for a few minutes.
  • Mix honey, sriracha, salt, pepper, cayenne, and red pepper; pour over chickpeas and simmer until thickened.
  • Remove from heat and let cool slightly.
  • Serve chickpeas over rice with vegetables, cilantro, and a drizzle of ranch dressing.
