A quick and flavorful dish combining tender chicken, sweet honey, and smoky barbecue sauce served over rice.

Ingredients

Main ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced red bell pepper
  • 2 cloves garlic, minced
  • 2 cups cooked chicken breast, chopped or shredded
  • 1 cup barbecue sauce
  • 3 tablespoons honey
  • cups cooked white rice (cold or day-old rice works best)
  • to taste Salt and pepper
  • for garnish Fresh parsley or green onions

Instructions 

  • Sauté onion and bell pepper in olive oil until softened, then add garlic and cook briefly.
  • Add chicken and cook for 2–3 minutes to heat through.
  • Stir in barbecue sauce and honey, simmer for 3–4 minutes until slightly thickened.
  • Add rice, season with salt and pepper, and cook for 3–5 minutes to absorb flavors.
  • Garnish with parsley or green onions and serve hot.

Notes

Use day-old rice for best texture and flavor absorption.
