Instructions
Preheat oven to 400°F (200°C). Line baking sheets with parchment or silicone mats.
Mix yeast, malt syrup, and 1/2 cup warm water; let sit until foamy.
Add remaining water, flour, and salt; knead until smooth. Let rise 1 hour.
Divide dough into 8 pieces, shape into pretzels, dip in lye solution, then sprinkle with salt.
Bake for 10 minutes until golden brown.
Notes
Handle lye with care and use in a well-ventilated area.
