Ingredients

Yeast and Sweeteners

  • 1 tablespoon active dry yeast
  • 1 tablespoon barley malt syrup or light brown sugar
  • 1.5 cups warm water (about 110°F), divided

Flour and Salt

  • 5 cups all-purpose flour
  • 3/4 teaspoon fine sea salt

Lye Solution

  • 2 tablespoons food grade lye
  • 1 liter water, room temperature

Salt for topping

  • Pretzel salt or coarse salt

Instructions 

  • Preheat oven to 400°F (200°C). Line baking sheets with parchment or silicone mats.
  • Mix yeast, malt syrup, and 1/2 cup warm water; let sit until foamy.
  • Add remaining water, flour, and salt; knead until smooth. Let rise 1 hour.
  • Divide dough into 8 pieces, shape into pretzels, dip in lye solution, then sprinkle with salt.
  • Bake for 10 minutes until golden brown.

Notes

Handle lye with care and use in a well-ventilated area.
