A comforting homemade chicken noodle soup made with tender chicken, fresh vegetables, and egg noodles, perfect for a cozy meal.

Ingredients

Broth and Chicken

  • 2 litres cold water
  • 2 skinless, boneless chicken breasts chicken breasts
  • 2 skinless bone-in chicken thighs chicken thighs
  • 3 bay leaves bay leaves
  • 4-5 whole peppercorns peppercorns
  • 1 tsp salt

Vegetables and Noodles

  • 1 tbsp butter
  • 1 carrot carrot
  • 1 onion onion
  • 1 stalk celery
  • 1 clove garlic (pressed)
  • 125 g egg noodles

Instructions 

  • Add chicken, bay leaves, peppercorns, salt, and water to a pot. Boil, then simmer for 30 minutes, skimming foam.
  • Remove chicken, shred, and strain broth. Set broth aside.
  • Melt butter, sauté vegetables for 5 minutes, add garlic, then pour broth back in. Add chicken and bring to boil.
  • Add noodles and cook for 8-10 minutes until al dente. Garnish with herbs before serving.

Notes

Use fresh herbs for best flavor and adjust salt to taste.
