Ingredients

Vegetables and Spices

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced green bell pepper
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 0.5 cup dry textured vegetable protein (TVP)
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Instructions 

  • Heat olive oil and sauté diced onion and bell pepper for 6 minutes.
  • Add garlic and cook for 1 minute.
  • Stir in spices, then add crushed tomatoes, broth, and TVP, mixing well.
  • Add beans, simmer for 35 minutes, then season with salt and pepper.
