Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Kodiak mix, almond milk, melted butter, and monkfruit sweetener to form dough; roll into a ¼-inch thick rectangle.
Combine pumpkin puree, protein powder, monkfruit sweetener, and pumpkin pie spice for filling; beat cream cheese, Greek yogurt, monkfruit sweetener, and vanilla for cream cheese filling.
Cut dough into 4 squares, add pumpkin and cream cheese fillings, fold corners to seal, and place on baking sheet.
Bake for 15–18 minutes until edges are golden brown.
Whisk powdered sugar with almond milk to make glaze; drizzle over warm danishes before serving.
