Ingredients

Protein

  • 2 pounds grilled chicken breast

Carbohydrates

  • 1.5 cups jasmine or brown rice

Legumes

  • 1 can 15 oz black beans (drained and rinsed)

Fruits & Vegetables

  • 1 avocado avocado (sliced)
  • 1 cup cherry tomatoes cherry tomatoes (halved)
  • 1 cup shredded lettuce shredded lettuce
  • 1 lime lime (for juice)
  • 2 tbsp cilantro (chopped)

Instructions 

  • Cook rice according to package instructions.
  • Grill or cook chicken breasts until fully cooked, then slice.
  • Assemble bowls with rice, chicken, black beans, avocado, cherry tomatoes, lettuce, and cilantro.
  • Squeeze lime juice over the bowls before serving.
