A quick and nutritious dessert combining creamy cottage cheese with fresh berries for a high-protein treat.

Ingredients

Dairy

  • 250 g cottage cheese
  • 1 pcs lemon (juice of 1 lemon)
  • 1 tbsp fresh apple juice
  • 1 tbsp almond meal
  • 0.5 tbsp coconut, rapadura or other unrefined sugar OR maple syrup (optional sweetener)
  • 150 g frozen berries (thawed slightly)

Instructions 

  • Add cottage cheese, lemon juice, apple juice, almond meal, and sweetener (if using) to a blender.
  • Process until smooth and creamy.
  • Add berries and pulse to combine or fold into the mixture.
  • Serve immediately or refrigerate for up to 3 days.
