Ingredients

Protein

  • 2 lb Skinless Chicken Breast (roasted and diced)

Vegetables

  • 2 pieces Celery (diced)
  • 3 pieces Green Onion (Scallion, sliced)

Herbs

  • 1 Tbsp Dill, fresh (chopped)
  • 1 Tbsp Flat Leaf Parsley (chopped)
  • 1 tsp Thyme, fresh (chopped)

Dressing

  • 1/2 lemon Lemon (juiced)
  • 1/2 cup Avocado Mayonnaise
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions 

  • Combine chicken, celery, and green onion in a large bowl.
  • Whisk together mayonnaise, lemon juice, herbs, salt, and pepper in a small bowl.
  • Add dressing to the chicken mixture and toss to coat evenly.
  • Serve immediately or chill before serving.
