This flavorful herb-baked chicken is easy to prepare and perfect for a delicious, crispy, and juicy meal.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs (About 1.5 - 2 lbs)
  • 1/4 cup unsalted butter (softened)
  • 2 cloves garlic (minced)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 1 whole lemon (zested and sliced)
  • to taste Salt and black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Pat chicken dry.
  • Mix butter, garlic, herbs, and lemon zest. Loosen skin and spread herb butter underneath.
  • Season chicken with salt and pepper. Rub remaining herb butter on outside. Arrange in baking dish with lemon slices.
  • Bake for 40-45 minutes until cooked through and skin is crispy.
  • Rest for 5-10 minutes before serving.

Notes

Ensure the chicken reaches an internal temperature of 165°F (74°C) for safety.
