Ingredients

Pasta

  • 1 lb rigatoni pasta
  • 1 lb Italian sausage (casings removed)
  • 2 medium zucchinis (diced)
  • 4 cloves garlic (minced)
  • 1 can crushed tomatoes (28 oz)
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste Salt and pepper
  • for serving Grated Parmesan cheese
  • for garnish Fresh basil leaves

Instructions 

  • Cook the rigatoni in salted boiling water until al dente, then drain.
  • Heat olive oil in a skillet, cook sausage until browned, then add garlic and cook 1-2 minutes.
  • Add zucchini, cook 5-7 minutes until tender, then stir in tomatoes and herbs, simmer 10 minutes.
  • Combine cooked pasta with sauce, toss to coat, then serve topped with Parmesan and basil.

Notes

For a vegetarian version, substitute sausage with grilled vegetables or plant-based sausage.
