A nutritious twist on the classic comfort food, packed with lean turkey and vegetables, topped with creamy mashed potatoes and cauliflower.

1 ½cupsrusset potatoes (peeled and chopped)
1 ½cupscauliflower florets
Cheese
½cupgrated parmesan cheese

¼teaspoongarlic powder
¼teaspoonblack pepper
¼teaspoonsalt
½cupchicken broth (low or no salt)
1lbground turkey
1cupdiced onion
1tablespoonminced garlic (about 2 garlic cloves)
½cupdiced carrots
¼teaspoonsalt
½teaspoonblack pepper
½teaspoondried rosemary
½teaspoondried thyme
½cuplow sodium chicken stock
1tablespoontomato paste
Frozen Veggies
1cuppeas
1cupcorn
Instructions
Preheat oven to 350°F (175°C) and prepare a greased casserole dish.
Boil potatoes and cauliflower for 10 minutes until soft.
Cook ground turkey with onions, garlic, and carrots for 10 minutes until cooked through.
Add broth, tomato paste, and frozen veggies to the turkey mixture; stir well.
Drain potatoes and cauliflower, mash with olive oil, parmesan, and seasonings. Layer turkey mixture in dish, top with mashed vegetables, and bake for 30 minutes.
Notes
For a creamier topping, add a splash of milk or butter when mashing.
