A nutritious twist on the classic comfort food, packed with lean turkey and vegetables, topped with creamy mashed potatoes and cauliflower.

Ingredients

Vegetables

  • 1 ½ cups russet potatoes (peeled and chopped)
  • 1 ½ cups cauliflower florets

Cheese

  • ½ cup grated parmesan cheese

Cooking Oils & Broth

  • 2 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • ½ cup chicken broth (low or no salt)
  • 1 lb ground turkey
  • 1 cup diced onion
  • 1 tablespoon minced garlic (about 2 garlic cloves)
  • ½ cup diced carrots
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ½ cup low sodium chicken stock
  • 1 tablespoon tomato paste

Frozen Veggies

  • 1 cup peas
  • 1 cup corn

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a greased casserole dish.
  • Boil potatoes and cauliflower for 10 minutes until soft.
  • Cook ground turkey with onions, garlic, and carrots for 10 minutes until cooked through.
  • Add broth, tomato paste, and frozen veggies to the turkey mixture; stir well.
  • Drain potatoes and cauliflower, mash with olive oil, parmesan, and seasonings. Layer turkey mixture in dish, top with mashed vegetables, and bake for 30 minutes.

Notes

For a creamier topping, add a splash of milk or butter when mashing.
