3/4cupmilk(I used 1%)
2tablespoonsbutter(plus additional for cooking)
Dry Ingredients
1 ½cupswhite whole wheat flour
2teaspoonsbaking powder
3/4teaspoonbaking soda
1/2teaspoonkosher salt
3/4teaspoonground cinnamon(*)
1/2teaspoonground ginger(*)
1/8teaspoonground nutmeg(*)
Pumpkin & Eggs
3/4cuppumpkin purée(NOT pumpkin pie filling)
2largeeggs
Sweeteners & Flavorings
2tablespoonspure maple syrup(or sugar or honey)
1teaspoonvanilla extract
Toppings & Extras
Pure maple syrup
Butter
Chopped toasted pecans
Vanilla greek yogurt
Instructions
Whisk Greek yogurt and milk; let rest 5 minutes.
Melt and cool butter.
Mix dry ingredients in a large bowl.
Combine wet ingredients with pumpkin, eggs, syrup, vanilla, and melted butter; stir gently.
Cook pancakes on a preheated skillet until bubbles form, then flip and cook until golden, about 4-5 minutes total.
