Enjoy these wholesome pecan scones that are perfect for a quick breakfast or snack, combining whole wheat flour, Greek yogurt, and crunchy pecans.

Ingredients

Dough

  • 1 ½ cups white whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 ½ tbsp unsalted butter, cold and cubed
  • ½ cup plain nonfat Greek yogurt
  • 3 tbsp pure maple syrup
  • 3 tbsp nonfat milk, divided
  • 2 tsp nonfat milk, divided
  • 1 tsp almond extract
  • 3 tbsp diced pecans, divided

Instructions 

  • Preheat oven to 425°F and line a baking sheet with a silicone mat or parchment paper.
  • Mix flour, baking powder, and salt. Cut in butter until crumbly. Stir in yogurt, maple syrup, 3 tbsp milk, and almond extract. Fold in 2 tbsp pecans.
  • Shape dough into a ¾-inch circle on baking sheet, brush with remaining milk, slice into 8 wedges, and press remaining pecans on top.
  • Bake for 23-27 minutes until golden and firm. Cool for 5 minutes before transferring to a wire rack.

Notes

For a gluten-free version, use certified gluten-free flour.
