Ingredients

Vegetables

  • 2 tablespoons olive oil
  • 1 diced yellow onion
  • 0.5 cup celery
  • 4 cloves garlic (minced)
  • 1 small jalapeno pepper (minced (optional))
  • 0.5 cup green bell pepper
  • 0.5 cup red bell pepper
  • 2 tablespoons tomato paste
  • 30 ounces diced tomatoes (no sugar added)
  • 3 cups vegetable broth (low-sodium)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 teaspoons smoked paprika
  • 1 tablespoon chili powder
  • 0.5 teaspoon dried cayenne pepper
  • 1 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper

Beans

  • 15 ounces butter beans (drained and rinsed)
  • 15 ounces kidney beans (drained and rinsed)
  • 15 ounces black beans (drained and rinsed)

Herbs

  • 0.25 cup cilantro (chopped)
  • 0.25 cup parsley (chopped)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add diced onion, celery, garlic, and peppers; sauté until softened.
  • Add tomato paste, diced tomatoes, and spices; cook for 5 minutes.
  • Pour in vegetable broth, bring to a boil, then add cooked rice and beans. Reduce heat and simmer for 15 minutes.
  • Stir in chopped cilantro and parsley before serving.

Notes

For extra flavor, let the jambalaya sit for 10 minutes before serving.
