Enjoy a healthier twist on classic corn dogs with these easy-to-make corn dog muffins, perfect for a quick snack or meal.

Ingredients

Batter

  • 1 2/3 cups Wholesome Yum Blanched Almond Flour
  • 1 tsp Baking powder
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 1/4 tsp Sea salt
  • 3 1/2 tbsp Unsalted butter (melted) (plus more for greasing)
  • 3 1/2 tbsp Unsweetened almond milk
  • 2 large Eggs
  • 1 tsp Sweet corn extract
  • 4 1.6-oz Hot dogs Hot dogs (cut into 6 pieces each)

Instructions 

  • Preheat oven to 400°F (204°C) and line a mini muffin pan with 24 liners.
  • Mix all batter ingredients until smooth.
  • Fill muffin cups about 2/3 full with batter.
  • Insert a hot dog piece into each muffin.
  • Bake for 12-14 minutes until golden brown.

Notes

Use a non-stick spray or butter to prevent sticking.
