A fresh and nutritious coleslaw made with shredded vegetables and a tangy yogurt-based dressing, perfect for a light side dish.

Ingredients

Vegetables

  • 6 cups green cabbage (shredded)
  • 2 cups red cabbage (shredded)
  • 1 cup carrots (shredded)

Dressing

  • 1/2 cup greek yogurt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic clove (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions 

  • Mix yogurt, olive oil, vinegar, maple syrup, garlic, salt, and pepper to make the dressing.
  • Place shredded green cabbage, red cabbage, and carrots in a large bowl.
  • Pour the dressing over the vegetables and toss to combine.
  • Serve immediately or refrigerate for up to 4 hours.

Notes

For extra crunch, add some chopped nuts or seeds.
