Ingredients

Vegetables

  • 2 cups Mixed salad greens (e.g., spinach, arugula, romaine)
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Cucumber, diced
  • 0.5 cup Bell pepper, diced
  • 1 cup Cooked chicken breast, shredded

Dressing

  • 0.5 cup Hummus
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • to taste Salt and pepper

Instructions 

  • Combine salad greens, cherry tomatoes, cucumber, and bell pepper in a large bowl.
  • Layer shredded chicken over the vegetables.
  • Drizzle olive oil and lemon juice, then season with salt and pepper.
  • Add a scoop of hummus in the center.
