These wholesome apple spice muffins are perfect for a nutritious breakfast or snack, combining warm spices with fresh apples and a moist texture.

Ingredients

Dry Ingredients

  • 2 cups White Whole Wheat Flour (or whole wheat or all-purpose flour)
  • 1 teaspoon Apple Pie Spice (store-bought or homemade)
  • 1 teaspoon ground Cinnamon
  • ½ teaspoon ground Cardamom
  • ½ teaspoon Fine Sea Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda

Wet Ingredients

  • 2 large Eggs (at room temperature)
  • ½ cup Unsweetened Apple Sauce
  • ½ cup Pure Maple Syrup
  • cup Extra Light Tasting Olive Oil (or melted coconut oil)
  • ½ cup Plain Greek Yogurt (4% Greek Style Yogurt)
  • 1 teaspoon Pure Vanilla Extract

Add-ins

  • 2 cups finely diced Apples (about 2 small Gala Apples)
  • ½ cup Raw Unsalted Walnuts (or pecans)

Instructions 

  • Preheat oven to 220°C / 425°F and line a muffin pan.
  • Mix dry ingredients in a bowl; set aside.
  • Whisk wet ingredients in a separate bowl.
  • Combine wet and dry, then fold in apples and walnuts.
  • Scoop batter into liners and bake at 220°C for 5 min, then reduce to 175°C and bake 16-17 min until golden and a toothpick comes out clean.
  • Cool for 5 min, then transfer to a wire rack. Store leftovers in an airtight container.

Notes

For best results, use fresh apples and store muffins in a sealed container for up to 3 days.
