Ingredients

Pasta

  • 12 ounces whole wheat penne

Meat

  • 1 pound extra-lean ground beef (93% lean or higher)

Vegetables

  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, finely minced

Seasonings

  • 1 teaspoon Italian seasoning blend
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Dairy & Sauces

  • 2 cups full-fat cottage cheese (for the creamiest result)
  • 1 cup plain Greek yogurt
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella
  • 1 cup freshly grated Parmesan

Finishing Touch

  • to taste Fresh parsley, chopped (for finishing)

Instructions 

  • Cook pasta in salted water until just tender, then drain and set aside.
  • Cook beef with onion and garlic until browned, then season with Italian seasoning, salt, and pepper.
  • Mix cottage cheese and Greek yogurt until smooth to create a high-protein sauce.
  • Combine pasta with beef mixture and marinara sauce, then spread cottage cheese mixture on top and sprinkle with cheese.
  • Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden, then rest before serving. Garnish with parsley.

Notes

Using full-fat cottage cheese adds creaminess; for a lighter version, opt for low-fat options.
