Ice cream
500mldouble cream

Instructions
Make the ice cream by warming cream, then whisking with egg yolks and sugar, adding vanilla seeds, and cooking until thickened. Cool, stir in buttermilk, strain, churn, and freeze.
Prepare the pastry by mixing butter, sugar, flour, cornflour, salt, and egg until a dough forms. Chill, then roll out and line a tart ring. Chill again.
Roast hazelnuts until golden, then make caramel with sugar and water, coat nuts, cool, and crush into a frosting.
Blind bake the pastry, then fill with hazelnut mixture and bake until set. Cool the tart.
Caramelize pears in sugar and butter, then cook until tender. Serve tart slices with caramelized pears, caramel sauce, crushed hazelnuts, and a scoop of ice cream.
