A vibrant and healthy Hawaiian-inspired chicken salad featuring fresh pineapple, quinoa, and a zesty dressing, perfect for a nutritious meal.

Ingredients

Marinade

  • 1/3 cup light coconut milk
  • 1/4 cup fresh pineapple juice
  • 1 tbsp gluten-free tamari sauce
  • Zest of 1 lime lime zest
  • 2 cloves garlic
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp ginger powder
  • 1/4 tsp salt
  • 1/2 tbsp olive oil
  • 1 large chicken breast
  • 3/4 cup fresh pineapple pieces
  • 6 cup chopped romaine lettuce
  • 1/2 avocado avocado
  • 1/2 red onion red onion
  • 1/2 cherry tomatoes cherry tomatoes
  • 1 1/2 cup cooked quinoa
  • 1 1/2 tbsp lime juice
  • 2 1/2 tbsp olive oil
  • 2 tbsp finely chopped cilantro
  • 1/2 tsp honey
  • 1/4 tsp salt

Instructions 

  • Marinate chicken with ingredients and refrigerate for at least 3 hours.
  • Mix dressing ingredients in a jar and set aside for 15 minutes.
  • Cook chicken in a skillet until golden, then rest and slice.
  • Sear pineapple in the same skillet until golden.
  • Assemble salad with lettuce, avocado, onion, tomatoes, quinoa, chicken, and pineapple. Drizzle with dressing and serve.
