A vibrant and nutritious bowl combining roasted sweet potatoes, quinoa, fresh greens, and a tangy maple Dijon dressing for a wholesome meal.

Ingredients

Vegetables

  • 1 lb sweet potatoes (peeled and diced)
  • 1 Tbsp olive oil

Grains

  • 1/3 cup dry quinoa ((1 cup cooked))

Greens & Fruits

  • 6 cups baby greens (or arugula/kale or combo)
  • 1 apple diced apple (like Granny Smith or Honeycrisp)
  • 1 avocado sliced or diced avocado (optional)

Nuts & Dried Fruit

  • 1 oz roasted pecans (or candied)
  • 2 Tbsp dried cranberries

Dressing

  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tsp Dijon mustard
  • 2 tsp maple syrup (or honey)

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment.
  • Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly charred.
  • Cook quinoa according to package instructions.
  • Whisk olive oil, balsamic vinegar, Dijon mustard, and maple syrup to make the dressing.
  • Divide greens between bowls, top with sweet potatoes, quinoa, apple, avocado, pecans, and cranberries. Drizzle with dressing.

Notes

Feel free to add more nuts or swap greens for your favorite leafy vegetables.
