Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment.
Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly charred.
Cook quinoa according to package instructions.
Whisk olive oil, balsamic vinegar, Dijon mustard, and maple syrup to make the dressing.
Divide greens between bowls, top with sweet potatoes, quinoa, apple, avocado, pecans, and cranberries. Drizzle with dressing.
Notes
Feel free to add more nuts or swap greens for your favorite leafy vegetables.
