Spooky and adorable, these Halloween monster cake pops are perfect for your festive celebration. They combine rich chocolate cake with fun monster decorations for a delightful treat.

Ingredients

Cake and Frosting

  • 1 box chocolate cake mix
  • 3 large eggs eggs
  • 0.5 cup vegetable oil
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Chocolate Coating

  • 2 pounds white melting chocolate or candy coating wafers
  • Food coloring gel in green, purple, orange, and red Food coloring gel (for decorating)
  • 48 pieces candy eyes (various sizes)
  • 48 pieces cake pop sticks
  • as needed Styrofoam block or cake pop stand (for drying)
  • as needed Small plastic bags (for melting chocolate)
  • as needed Toothpicks (for mixing colors)

Instructions 

  • Preheat oven to 350°F (175°C). Mix cake ingredients, pour into pan, and bake for 28-32 minutes. Cool completely.
  • Crumble cooled cake, mix with cream cheese and butter, then add powdered sugar, vanilla, and cream to make frosting. Combine with cake crumbs.
  • Shape mixture into 2-inch balls, refrigerate for 2 hours. Melt white chocolate in intervals, dip sticks into chocolate, insert into balls, then coat entire ball. Let set.
  • Place cake pops on stand, add candy eyes while coating is still wet, then decorate with melted colored chocolate for monster features. Let all set before serving.

Notes

Use tweezers for precise placement of eyes and decorations for best results.
