A creamy and flavorful macaroni salad perfect for picnics and gatherings, with fresh vegetables and a tangy dressing.

Ingredients

Pasta

  • 2 cups elbow macaroni

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard

Vegetables and herbs

  • 1/2 cup diced red bell pepper
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions 

  • Cook the macaroni in boiling salted water for 7-8 minutes, then drain and rinse with cold water.
  • Mix mayonnaise, sour cream, vinegar, and mustard until smooth.
  • Combine cooled pasta with dressing and fold in vegetables and parsley.
  • Cover and refrigerate for at least an hour before serving.

Notes

For extra flavor, add a dash of paprika or chopped pickles.
