A flavorful fusion of gumbo and jambalaya, this dish combines spicy sausage, tender chicken, and shrimp over fragrant garlic rice for a hearty, satisfying meal.

Ingredients

Meat and vegetables

  • 2 tablespoons olive oil
  • 1 pound spicy andouille (or smoked) sausage, sliced
  • 8 chicken tenderloins chicken tenderloins, cut into bite-size pieces
  • Salt Salt

  • 3 ribs celery, finely diced
  • 1 large onion, finely diced
  • 1 large bell pepper, finely diced
  • 2 bay leaves bay leaves
  • 1/2 teaspoon Creole seasoning
  • 1/4 teaspoon cayenne pepper
  • 3 cloves garlic, finely chopped
  • 1 tablespoon heaping tomato paste
  • 1/2 pound okra, sliced into 1/4 – 1/2” thick slices
  • 1 (28 oz) can organic diced tomatoes with juice diced tomatoes with juice
  • 2 cups warm chicken stock
  • 1/2 pound peeled and cleaned, medium size shrimp (raw)
  • 1 tablespoon flat-leaf parsley, chopped
  • 1 tablespoon cilantro, chopped
  • 2 large cloves garlic, pressed through garlic press
  • 2 cups jasmine rice (un-rinsed)
  • 1 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 3 cups water

Instructions 

  • Cook sausage in a large pot until browned, then remove and set aside.
  • Brown chicken in the same pot, then remove and set aside.
  • Sauté diced celery, onion, and bell pepper; add bay leaves, seasonings, garlic, and tomato paste; cook until fragrant.
  • Add okra, tomatoes, chicken stock, sausage, and chicken; simmer for 20 minutes.
  • Prepare garlic rice by toasting rice in garlic oil, then simmer with water until tender.
  • Stir in shrimp and cook for 2-3 minutes; finish with parsley and cilantro, then serve over garlic rice.

Notes

Adjust spice levels with hot sauce or red pepper flakes as desired.
