A flavorful fusion of gumbo and jambalaya, this dish combines spicy sausage, tender chicken, and shrimp over fragrant garlic rice for a hearty, satisfying meal.

1/2poundokra, sliced into 1/4 – 1/2” thick slices
1 (28 oz) canorganic diced tomatoes with juicediced tomatoes with juice
2cupswarm chicken stock
1/2poundpeeled and cleaned, medium size shrimp (raw)
1tablespoonflat-leaf parsley, chopped
1tablespooncilantro, chopped
2large clovesgarlic, pressed through garlic press
2cupsjasmine rice (un-rinsed)
1teaspoonsea salt
1/4teaspooncracked black pepper
3cupswater
Instructions
Cook sausage in a large pot until browned, then remove and set aside.
Brown chicken in the same pot, then remove and set aside.
Sauté diced celery, onion, and bell pepper; add bay leaves, seasonings, garlic, and tomato paste; cook until fragrant.
Add okra, tomatoes, chicken stock, sausage, and chicken; simmer for 20 minutes.
Prepare garlic rice by toasting rice in garlic oil, then simmer with water until tender.
Stir in shrimp and cook for 2-3 minutes; finish with parsley and cilantro, then serve over garlic rice.
Notes
Adjust spice levels with hot sauce or red pepper flakes as desired.
