Ingredients

Meat and Rice

  • 1 lb ground beef (85% lean preferred)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1/2 cup tomato sauce or salsa
  • 3 cups cooked white or brown rice
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions 

  • Cook rice according to package instructions and keep warm.
  • Sauté onion in olive oil until translucent, then add garlic and cook briefly.
  • Add ground beef, cook until browned, then season with taco mix and tomato sauce; simmer briefly.
  • Prepare toppings: warm corn and beans, slice avocado, halve tomatoes, chop cilantro.
  • Assemble bowls with rice, beef, and toppings; finish with cheese, cilantro, and lime wedges.
