Ingredients

Meat and Rice

  • 1 lb ground beef
  • 1.75 cups water
  • 1 cup uncooked long-grain white rice

  • 2 tablespoons tomato paste
  • 3/4 cup water
  • 1 teaspoon garlic powder
  • 1/4 teaspoon sea salt

Vegetables and Toppings

  • ½ cup plain Greek yogurt (nonfat)

  • 1 15 oz. can black beans (drained and rinsed)
  • 1 cup frozen corn
  • 2 large avocados (sliced in half)
  • ½ cup fresh cilantro
  • 1 lime juice (for serving)

Instructions 

  • Prepare cilantro lime rice following the provided link and set aside.
  • Cook ground beef with taco seasoning, tomato paste, water, garlic powder, and salt until browned.
  • Make pico de gallo by dicing onion and tomatoes, then mixing with lime juice.
  • Mix Greek yogurt, hot sauce, and lime juice to create a spicy drizzle.
  • Drain and rinse black beans and corn; slice avocados in half.
  • Assemble bowls with beef, pico, rice, beans, corn, avocado, and drizzle with yogurt sauce. Garnish with cilantro and lime.
