Ingredients

Meat and Beans

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 15-ounce can black beans, rinsed and drained
  • 1 10-ounce can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • to taste Salt and freshly ground black pepper
  • 3 cups cooked rice

Optional Toppings

  • Shredded lettuce, diced tomatoes, salsa, sour cream or Greek yogurt, shredded cheese, avocado, cilantro, pickled jalapeños, corn, lime wedges (Assorted toppings as desired)

Instructions 

  • Heat olive oil in a skillet, cook ground beef until browned, then drain excess fat.
  • Add chopped onion and cook until softened, then stir in garlic and cook briefly.
  • Add beans, tomatoes, spices, salt, and pepper; simmer for 10-15 minutes.
  • Serve beef mixture over rice, top with desired toppings, and garnish with lime wedges.

You can customize toppings for added flavor and texture.
