A flavorful and hearty burrito bowl featuring seasoned ground beef, fresh vegetables, and a creamy cilantro-lime sauce.

Ingredients

Meat and spices

  • 1 lb Lean ground beef
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • ½ tsp Onion powder
  • 1 tsp Paprika
  • 1 tsp Cumin
  • ½ tsp Salt
  • ½ tsp Cayenne pepper
  • 1 small Red bell pepper
  • 1 small Green bell pepper
  • 2 Tbsp Tomato paste
  • ¼ cup Onion (red or yellow)
  • ¼-⅓ cup Water or broth
  • cup Sour cream
  • 1 Jalapeño (remove seeds for milder heat)
  • cup Cilantro
  • 1 Tbsp Lime juice

Rice and beans

  • ½ cup Long grain rice, uncooked
  • 15 oz Black beans (canned) (drained and rinsed)
  • 15 oz Corn kernels (canned) (drained)

Instructions 

  • Cook the ground beef in a skillet until browned, then add spices and cook for 2 minutes.
  • Add chopped bell peppers, onion, and tomato paste; cook for 3 minutes.
  • Pour in water or broth, simmer for 5–7 minutes until thickened.
  • Cook rice according to package instructions.
  • Blend sour cream, jalapeño, cilantro, and lime juice until smooth.
  • Assemble bowls with rice, beef, beans, corn, and sauce.

Notes

You can customize the spice level by adjusting the jalapeño and cayenne pepper.
