A quick and hearty one-pan meal combining ground beef, rice, and vegetables for a satisfying dinner.

Ingredients

Meat and Grains

  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 2.5 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 0.5 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a skillet; sauté onion and bell pepper until softened.
  • Add ground beef; cook until browned. Drain excess fat.
  • Stir in garlic and spices; cook for 1 minute.
  • Add rice, broth, and tomatoes; bring to boil. Cover and simmer 20 minutes.
  • Optional: sprinkle cheese during last 5 minutes; garnish with parsley before serving.

Notes

For a healthier option, use lean ground beef and reduce cheese.
