Instructions
Heat olive oil in a skillet; sauté onion and bell pepper until softened.
Add ground beef; cook until browned. Drain excess fat.
Stir in garlic and spices; cook for 1 minute.
Add rice, broth, and tomatoes; bring to boil. Cover and simmer 20 minutes.
Optional: sprinkle cheese during last 5 minutes; garnish with parsley before serving.
Notes
For a healthier option, use lean ground beef and reduce cheese.
