Ingredients

Protein

  • 1 pound jumbo raw shrimp (peeled and deveined)
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil

Salad

  • 4 cups arugula or baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1 cup mango (cubed)
  • 1 avocado avocado (sliced or diced)
  • 1 lime lime (juiced)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic (minced)

Instructions 

  • Mix shrimp with taco seasoning and 1 tbsp olive oil.
  • Grill shrimp until opaque, about 1-2 minutes per side.
  • Whisk together dressing ingredients in a jar.
  • Combine greens, tomatoes, mango, and avocado in a bowl.
  • Top salad with shrimp and drizzle with dressing. Toss and serve.

Notes

For extra flavor, marinate the shrimp for 10 minutes before grilling.
