A vibrant and flavorful salad combining grilled pineapple, seasoned chicken, and fresh vegetables, perfect for a light and satisfying meal.

Ingredients

Protein

  • 2 large chicken breasts (Pat dry and season)
  • 1 tbsp olive oil (For chicken and pineapple)
  • 1 tsp pink sea salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 /2 red pepper flakes
  • 1 Pineapple Pineapple (Fresh, peeled and sliced)
  • 5 cups chopped romaine lettuce
  • 1/2 red onion red onion (Thinly sliced)
  • 1/2 cucumber cucumber (Sliced)
  • 1 cup cherry tomatoes (Halved)
  • 1 avocado avocado (Peeled and sliced)
  • 1/4 cup extra virgin olive oil (For dressing)
  • 1/4 cup lime juice (Freshly squeezed)
  • 2 tbsp honey
  • 1 tsp garlic powder (For dressing)
  • 1/2 tsp pink sea salt (For dressing)
  • 1/2 tsp black pepper (For dressing)
  • 1/2 tsp red pepper flakes (For dressing)

Instructions 

  • Preheat grill and prepare pineapple slices and seasoned chicken.
  • Grill chicken for 7 minutes per side and pineapple for 3-4 minutes per side.
  • Chop vegetables and prepare dressing by whisking olive oil, lime juice, honey, garlic, salt, pepper, and red pepper flakes.
  • Slice grilled chicken and pineapple; assemble salad with greens, vegetables, chicken, and pineapple.
  • Pour dressing over salad, toss gently, and serve immediately.

Notes

For extra flavor, marinate chicken with seasonings for 30 minutes before grilling.
