A fresh and flavorful salad combining sweet grilled peaches, peppery arugula, creamy burrata, and crunchy walnuts, drizzled with balsamic glaze.

Ingredients

Peaches

  • 4 pieces ripe peaches, halved and pitted

Arugula

  • 6 cups arugula

Burrata cheese

  • 8 ounces burrata cheese

Walnuts

  • 1/4 cup toasted walnuts

Balsamic glaze

  • 1/4 cup balsamic glaze

Olive oil

  • as needed olive oil for grilling

Salt and pepper

  • to taste salt and pepper

Instructions 

  • Preheat grill to medium heat. Brush peach halves with olive oil.
  • Grill peaches cut side down for 4-5 minutes until grill marks form. Cool slightly.
  • In a bowl, toss arugula with grilled peaches, then tear burrata over the top.
  • Sprinkle walnuts, drizzle with balsamic glaze, and season with salt and pepper.
  • Serve immediately for best flavor.

Notes

Use ripe peaches for the best flavor and grill just until caramelized.
