Instructions
Heat a grill pan or grill to medium heat.
Brush halloumi slices with 1 tablespoon of olive oil and grill for 2-3 minutes per side.
Combine cucumbers, tomatoes, greens, and mint in a large bowl.
Mix remaining olive oil, lemon juice, salt, and pepper; drizzle over the salad.
Add grilled halloumi to the salad and serve immediately.
