Meat

  • 8 pieces bratwurst
  • 1/2 cup Untold Brewing 'Festbier' (Märzen or Vienna Lager also works)
  • 1 yellow onion yellow onion (halved and thinly sliced (1/4 inch thick))
  • 2 tablespoons unsalted butter
  • to taste Salt and pepper
  • 1 1/2 cups lukewarm Festbier (around 100°F)
  • 1 packet instant or active dry yeast
  • 1 tablespoon unsalted butter (divided)
  • 1 teaspoon salt
  • 3 3/4 cups all-purpose flour (leveled)
  • coarse sea salt or kosher salt for sprinkling
  • 1/2 cup baking soda
  • 9 cups water

Instructions 

  • Preheat grill and cook bratwurst until browned and cooked through, about 15-20 minutes.
  • Sauté sliced onions in 2 tablespoons of butter until caramelized, about 10 minutes.
  • Prepare pretzels by boiling water with baking soda, then shape dough, boil briefly, sprinkle with coarse salt, and bake at 450°F (230°C) for 12-15 minutes.
  • Serve bratwurst with sautéed onions, mustard, and freshly baked pretzels.

Notes

For best results, use high-quality bratwurst and fresh ingredients for the pretzels.
