A homemade take on the classic green bean casserole, featuring fresh ingredients and rich flavors.

3largeshallots, peeled and very thinly sliced into rings
1/4cupflour
1/4tspsalt
vegetable oil for fryingvegetable oil(for frying)
1 1/2lbsgreen beans, trimmed
2cupshalf and half, or cream
1/2ouncedried mushrooms (Shitake)
3Tbspbutter
3Tbspflour
1/3cupdry sherry (not cooking sherry)
1cupshredded Gruyere cheese, divided((measure out a heaped cup))
to tastesalt and fresh cracked black pepper
dashoffresh grated nutmeg(or more to taste)
Instructions
Fry sliced shallots in vegetable oil until golden and crispy, then drain.
Blanch green beans in boiling water until tender, then drain and set aside.
In a saucepan, melt butter, add flour, and cook to make a roux. Stir in cream, sherry, mushrooms, and half the cheese; season with salt, pepper, and nutmeg.
Combine green beans with sauce, transfer to a baking dish, top with remaining cheese and fried shallots.
Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
